I know that its hard to eat healthy and for many of us it is very difficult to get multiple servings of fruit and veggies into our diet every day. I wanted to share with you all one of the ways I incorporate veggies into my breakfast. With this recipe you get 2-3 servings of veggies depending of course on how many you decide to put in.
3 eggs whisked with 2 t water
salt, garlic and onion powder to taste
handful of fresh basil , chopped
1 small slice mozzarella cheese, chopped into small bits
1-2 c spinach
1/2 c chopped red onion
1/2 c diced tomatoes (raw or from a can)
2 t canola oil
1 T finely grated parmesan cheese
In a skillet over medium heat add oil and onions, saute for 3 minutes, add tomatoes and spinach, let sit-stirring occasionally until spinach wilts. In the meantime whisk eggs with 2 t water, add salt, garlin and onion powder to taste. Pour egg mixture over veggies and add both cheeses and bay leaves, stir and scrape bottom of pan occasionally until eggs are cooked through.
